04/07/2017 (Tuesday) 香蕉蛋糕

Bento of the day


I baked in 2 pcs 5" round pan today

Banana Cake
Ingredients
½ Tbsp. butter for greasing the baking dish (i didn't)
1 ⅔ cups (208g) all-purpose flour
½ tsp. salt (i put 1/4tsp)
½ tsp. baking soda
½ tsp. baking powder
½ cup (113 g) butter, soften
50g cane sugar
2 large eggs, at room temperature
1 Tbsp. cooking oil (vegetable, canola, grapeseed oil)
1 tsp. vanilla extract
3-4 ripe bananas (about 200g)
½ - ⅔ cup raisins (optional)
1 additional banana for topping

Steps:
1) Preheat oven to 175°C and grease an 8” square baking dish with butter (bottom and sides).
2) In a bowl, combine flour, salt, baking soda and baking powder and whisk all together.
3) In another bowl, combine soften butter and sugar and whisk well.
4) Add eggs, oil, and vanilla extract and beat with the whisk until well blended.
5) Mash bananas with a fork and mix into the egg mixture.
6) Add the flour to the banana mixture and stir just until blended. Add raisins, if you prefer.
7) Pour the batter into the prepared pan, spreading it evenly with the rubber spatula. Slice 1 banana thinly into rounds and decorate on top of the banana bread.
8) Put the pan in the oven and bake at 175°C until a toothpick inserted into the center of the bread comes out clean, about 1 hour.
9) Remove the baking dish from the oven and let cool for 20 minutes. If you don't eat right away, wrap each slice or the whole cake with plastic wrap. Store at the cool place and enjoy within 2-3 days.

今天用了2个5寸的圆蛋糕模,175‘C烘烤35分钟

香蕉蛋糕
材料:
少许抹烤盘的奶油(我没抹油,也很容易脱模)
208g 低筋面粉/普通面粉
1/4茶匙 海盐
½茶匙 小苏打
½茶匙 泡打粉
113克 无盐奶油,软化
50克 有机蔗糖
2个大鸡蛋,室温
1汤匙 植物油(玉米油,米糠油,葡萄籽油)
1茶匙 香草精 (我没有放)
3-4条 熟的香蕉(约200g)
½ - ⅔杯 葡萄干(我没有放)

另外1条香蕉,切片,铺在蛋糕面糊上面

做法:
1)预热烤箱至350°F(175°C),并用奶油(底部和侧面)涂上一个8“方形烤盘。
2)在一个大碗中,混合面粉,海盐,小苏打和泡打粉。
3)在另一个碗中,将软化的奶油和糖搅拌均匀。
4)然后加入鸡蛋,植物油和香草精,搅拌均匀。
5)用叉子把香蕉压成泥,加入蛋糊中,拌匀。
6)把粉类加入到香蕉蛋糊中,用橡皮刮刀,轻拌混合。 (不要过度搅一面起筋)
把葡萄干加入(可不放)
7)将面糊倒入准备好的蛋糕模,用橡皮刮刀把表面抹平。将1条香蕉切片,装饰在香蕉面糊上。
8)送入已经预热175°C的烤箱里烘烤约1小时。 (如果分2个蛋糕模烘烤的话,时间可以缩短,烤35分钟即可),用竹签插入蛋糕,出来是干净的就是熟透了。如果表面不够上色,可以把烤盘移至上层,让蛋糕快速上色。
9)从烤箱中取出烤盘,待凉20分钟。如果不立即享用,用塑料包裹每片或整个蛋糕。存放在阴凉处,2-3天内享用。
