1/3/2017 cheesy sponge cake


Cheesy Sponge Cake
古早味起司蛋糕
材料 (INGREDIENTS)
A
40g 植物油 (vegetable oil)
100g 低筋麵粉 (cake flour)
20g 起司粉(cheese powder)
85g 牛奶 (milk)
7蛋黃 (egg yolk)
B
7 蛋白 (egg white)
80g 砂糖/蔗糖(castor sugar/cane sugar)
 C
5 pcs 起司片(cheddar cheese)
(3歲以下可使用100克刨碎的車達起司)(100g grated cheddar block cheese for below 3yo)

準備preparation:
剪好烤紙鋪在9吋四方烤盤
Cut parchment paper and lay on 9" square pan

做法 (Steps)
1. 把牛奶和油加熱至70度C  (heat oil and milk till 70'C)
2. 混合植物油起司粉和麵粉至無顆粒
(mix vegetables oil, cheese powder and flour till no more lumps)
3. 加入蛋黃攪拌至順滑(add in milk yolk mix to smooth batter)
4. 慢慢加入砂糖打發蛋白至濕性發泡
(slowly add in sugar and beat egg white to stiff peak)
5. 加入 1/3  B 材料進 A 材料攪拌均勻
(add 1/3 of  B ingredients to A and mix well)
6. 最後小心拌入 A + B (lastly carefully combine A + B)
7.倒入 2/3 麵糊在9寸烤盤 (fill in 2/3 batter into 9 inch  square pan)
8.鋪上起司片再倒入剩餘的麵糊 
(place a layer of cheddar cheese on top and fill in the remaining batter)
9. 表面撒上起司粉 (sprinkle some cheese powder on top)
10. 水浴法150度C,烤60分鐘  (steam bake at preheated oven of 150'C for 60mins)
11. 把烤箱門留縫隙散熱5分鐘。
(Leave oven door open a gap for 5 mins)
12. 把蛋糕從烤箱取出,然後把蛋糕在桌子上敲兩下以震出熱氣。
(Remove cake from oven, dap twice on the table to release hot gas)
13.撕開烤紙。讓蛋糕休息10分鐘後就可以切片享用了。
(Remove the parchment paper, let cake rest on wire mesh for 10mins. Cut and ready to serve.)

  3. Can we substitute the oil with butter or other type of oil ?

    1. yes. can use any type of vegetable oil. if butter is used, can use melted butter.

  4. If I decide not to have cheese powder, what is the measurements for flour?
