Today we go to my mother's house and still need to wake up early to prepare some snacks for my 2yo lo.
Thanks to a Taiwanese mummy (Sonia Lee) who shared the recipe and it's taste good and melt in the mouth.
Banana Snow Cake
Ingredients :
200g mashed bananas
Ingredients :
200g mashed bananas
20g potato starch
50g corn flour
450ml fresh milk
Some desiccated coconut for deco
Steps:
1) add 200ml milk into corn flour, potato starch and mix well
2) pour 250ml milk into a small pot, add in mashed bananas (optional : can add 1 tbsp sugar if prefer sweeter taste. I did not put sugar but the taste is mild sweet and just nice) , cook with medium heat
3) add (1) into flour mixture when it is going to boil, turn to small heat and keep stirring the mixture.
4) once mixture getting very thick, off fire and pour into a greased 6" square pan and flatten the top surface
5) let it cool down before storing in the fridge for 1 hour
6) cut into 16 small pieces and dip each cube into dried desiccated coconut and ready to serve (lo below 1yo can omit the desiccated coconut if feel uncomfortable)

參考了棉花糕和雪花糕的食譜,感覺两者都很像似。有蛋白,有燕菜粉。。也許一個是口感,一個是外型而得来的名稱。
以下是參考一位臺湾媽媽(Sonia Lee)的食譜,食譜簡單,容易制作,適合6個月以上的寶寶。
香蕉雪花糕
材料:
200 克香蕉泥
20克太白粉
50克玉米粉
500毫升鮮奶/ 配方奶
一些乾椰絲(沾用)
做法:
1) 將太白粉,玉米粉加入200毫升的鮮奶,用攪拌均匀。
2) 將300克的鮮奶和香蕉泥加入一個小鍋,用中火煮(如果喜欢比較甜,此時可以加一湯匙糖。我没有加,味道是微甜)
3)把撹拌均匀的(1)加入將煮滚的香蕉牛奶,轉小火并不停地攪拌。
4)奶糊變得濃稠時就可以息火了。
5) 將奶糊倒入一個抹油的6吋正方蛋糕模,抹平表面,待凉後放如入冰箱冷藏一個小時。
6)切成16片正方小塊,沾上乾椰絲就可以享用了(如果不喜欢,一歳以下的寶寶可以省略乾椰絲)
