Yesterday I was not posting any meals for my 2 yo lo as she was not feeling well and I looked after her at home. I cooked her the following foods without taking any photos:
1) mee sua with miso seaweed soup - breakfast
2) udon with winter melon soup - lunch and dinner

Today, I never prepared any baked or fried foods for my lo as she just recovered from fever. 

Breakfast: Steam apple cream cheese cake

Lunch: Minced Pork and Mushroom Stew with MeeSua
Dinner: Minced Pork and Mushroom Stew with Rice

Teatime: Barley Pumpkin Dessert 


Steam Apple Cream Cheese Cake
Ingredients:
1/2 organic red apple
30g cream cheese
15g icing sugar
1 tbsp milk 
1 tbsp olive oil
1 egg
45g organic self-raising flour
1/4 tsp baking powder


Steps:

1) roughly blend the apple with milk (pause blend for few seconds only) set aside.
2)  In a mixing bowl, Cream the cream cheese with sugar by using spatula to press &mix till well combined
3)  add in egg and beat till well combined. Then add in the apple and oil. stir well.
4)  Sieve in flour mixture (flour & baking powder) and fold gently
5)  scoop the batter into cupcake moulds and Steam at medium heat for 10-12 mins




Minced Pork and Mushroom Stew with MeeSua and Rice
Ingredients:
80g minced meat tenderloin
1 big dried mushroom
some diced red capsicum
some diced cucumber
2 shallots (chopped finely)
1 tsp liquid amino
1/2 tsp natural rock sugar
dash of pepper powder
1/2 cup water/ soup stock
1 tsp corn flour + 2 tbsp water

Steps:
1) heat pan, add some oil, add in shallot and sauteed till fragrant
2) add in minced meat and stir fry for a while
3) add in mushroom, capsicum and cucumber
4) add in liquid amino, rock sugar and dash of pepper 
5) add in water and boil for a while, add in corn flour mixture,
6) off fire and ready to serve with noodle or rice


Barley Pumpkin Dessert
Ingredients:
1 tbsp barley (soaked overnight)
50g pre-cooked mung bean
20g butternut / pumpkin
2-3 cups water
2 tsp natural rock sugar / brown sugar

Steps:
1) Cook barley with water for 30mins
2) add in pumpkin and cook till tender 
3) add in pre-cooked mung bean and cook for 5 mins
4) add in rock sugar and off fire
