Monday is always a tiring day for me~ 
I am lazy to wake up from the bed and my mind is so blank and lack of ideas to prepare foods. 

Breakfast: 5 min kneadless cheese & ham bun and fresh milk

Lunch & Dinner: Animal pasta with apple onion soup and meat nuggets

Teatime: sweet potato rice rings and tomato juice

Pasta
Ingredients :
Animals Shape pasta (or any type of pasta)
Cook as per packaging instruction, soak in cold icy water for 30 seconds, drain, set aside. 


Meat Nuggets
Ingredients
80g minced meat tenderloin
1 brown button mushroom
1 shallot
2 french beans
1 egg
pinch of salt and pepper powder to taste
1-2 tsp potato starch/corn starch

Mix everything and form nugget shape, pan fry till both sides light golden brown.




Apple Onion Soup
(To boost immune system)
Ingredients: 
1 organic Apple
2 big onion
1 kampung chicken tight
2 liters water

Boil for 2 hours or more... no seasoning required...soup is very yummy.


Sweet Potato Rice Rings
Ingredients:
4 tbsp uncooked White Rice / brown rice 
(Pre-soaked overnight and drain away the soaked water)
50g cooked mashed sweet potato
1 egg yolk
1 tsp sugar (can omit if using japanese sweet potato)

Steps:
1) Blend all the ingredients till smooth then put into a plastic bag. 
2) Cut a small hole at the edge. (Bigger size will resulting not so crunchy) squeeze out circle shape on the non stick baking sheet laid on baking tray
3) Bake at 180'C for 15mins or light golden brown.

*** Texture: very crunchy
