22/4/2015 Wednesday Happy Hour

Black sesame seeds is one of the good source of calcium which is 5X more than cow milk which I heard from the radio one day. after googled, ~

Black sesame for healthier skin and bones
Abundant in calcium and zinc, black sesame seeds can keep your bones strong and help you ward off osteoporosis. The seeds also provide the body with vitamin E, which is needed for healthy skin. These health benefits of the black sesame can keep you strong, and beautiful, even as you age."

Therefore, for healthy grow young toddlers, calcium is very important to keep them grow with healthy bone and teeth.

Breakfast: Black sesame dessert & steam baby corn and sweet corns

Lunch & Dinner : Mix Grains rice served with mix vegetable minced pork curry

Teatime : Potato Rings and Grapes yogurt drink



Black sesame dessert 
Ingredients
1/2 cup cooked rice
1 cup water
2 tbsp sesame powder
1 ~ 1.5 tsp Natural rock sugar
Steps:
1) blend water and cooked rice with blender
2) pour into a sauce pan, add in sesame powder, keep stirring while cooking under small fire. If too thick the mixture, add little bit water.
3) add in rock sugar and cook till melted.
4) blend the mixture again to have more smoothie texture. ( I try to sieve it with a coffee strainer and its work!!)
5) ready to serve warm.



Mix Vegetables Minced Pork Curry
Ingredients:
1 small potato
1/3 pc of carrot
1" zucchini
1 shallot (chop finely)
1/2 cup minced pork (marinated with grape juice for 30mins)
2-3 tbsp pure grape juice
2 rice size of sea salt
1-2 tsp organic curry powder
2 tbsp full cream milk
Adequate water ( i used 2 cups water)

Steps:
1) cut all ingredients into small bite size that lo can chew
2) sautee shallot with grapeseed oil (or any good vege oil) till fragrance
3) add in curry powder to stir fry till fragrance too
4) add in minced pork, carrot and potato to stir fry 1-2 mins
5) then pour in water to cover all ingredients and shimmer till potato is tender
6) add in milk, grape juice and salt.
7) cook till desired consistency then off fire. ready to serve with rice.




Potato Rings
Ingredients: 
50g cooked & mashed potato
2 tsp potato starch
2 tsp cake flour
1 egg yolk
1 tsp sugar
Steps:
1) mix all the ingredients till combined.
2) put into a plastic bag and cut a hole at the edge.
3) Squeeze out ring shape on the non stick baking sheet
4) bake at preheat oven at 165°C for 10-15 mins or the ring sides turn lightly golden brown.

P/s: once the rings are baked till completely dry and hard, light golden brown, it is very crunchy!!! if you press and touch the surface of the rings which are still soft, they will not crunchy

TIPS FOR BUSY MUMMIES
The above recipe can be kept in freezer one night before baking it in next morning. Just blend all the ingredients and put it in a plastic bag OR 2 bags (if your lo could not finish all in one time)...tight well the opening then keep them in the freezer. Next day morning just thaw it till room temperature, cut a hole at the edge, squeeze out sticks shape or rings shape and bake at usual.

21/4/2015 Tuesday Hokkaido Buns

A very good morning and wonderful day even though mummy is overslept but luckily still managed to prepare the following foods for my 20.5mo lo.

My gal was STTN from 10.30pm till 7.30am and i feel very happy and hope that she will be STTN starting from today.

Breakfast : Hokkaido Bun, Orange and Goat Milk
Lunch & Dinner : Mee Sua with Grouper Soup and Young Coconut Juice
Teatime : Apple Barley Drink 

Hokkaido Buns
Ingredients :
270g bread flour 
30g cake flour 
20g milk powder
150g cold milk
80g whipping cream
40g brown sugar
3g salt (i used pinch of salt only)
5g instant yeast

Method : (using Tesco Bread Maker)
1. Place the ingredients in sequence into the bread maker baking pan. I started with all the wet ingredients (cold milk, whipping cream) then dry ingredients (salt, brown sugar, milk powder, cake flour, bread flour then instant yeast)
2. Set to dough function : Menu 8 for 20mins, stop the machine and reset again dough function no 8 for another one cycle
3. Once the  cycle completed, remove the bread from the bread maker and divide into 12 portions, roll into round shape and place on a baking tray which laid with non stick baking sheet.
4. let it proof for 30-40mins or double the size, then apply some egg wash on the buns surface.
5. Bake at preheated oven of 180'C for 15mins.
6. Once baking completed, remove buns from the baking tray and transfer onto a wire rack. Let cool completely.


Mee Sua in Grouper Soup 石斑鱼汤面线
1 pc of mee sua
Steps:
1) cook misua till tender (3mins), drain dry, soak in cold icy water for 30 secs, drain dry again, add 1 tsp grapeseed/olive oil and mix well)

Grouper Soup
Ingredients
1/2 slice of grouper fish
5 cherry tomatoes
1 onion
1 slice ginger
1 tsp liquid amino or 1/4 tsp salt
1 tbsp fresh milk / fullcream milk
dash of pepper powder
1 tsp corn flour

Steps:
1) wash the fish slice and drain, coated with corn flour and pepper powder
2) fry the fish in some oil till light golden brown
3) boil 6-7 cups of water in a small pot, add in fish, ginger, onion and cook for 30 mins
4) add in liquid amino / salt and milk and off fire.


Apple Barley Drinks
Ingredients
1 cup of cooked barley (chinese barley)
1-2 tbsp raw barley
1 apple (diced)
1-2 tsp rock sugar (can omit)
3 cups hot water

Cook in slow cooker with auto mode for 1-2 hours. ready to serve warm

Steam pandan cake & Hokkaido buns

Hokkaido Buns
Ingredients
hokkaido wholemeal bread
Ingredients :

Combination of the below recipes for the steam pandan cake...

Steam Pandan Cake
Ingredients
3 eggs
100g all purpose flour
30g muscovado sugar
30ml pandan juice
1 tbsp grapeseed oil

Steps:
1) Beat  egg with sugar till ribbon stage which you can write a "S" with batter and it is not disappear so soon. ( using electrical mixer to beat 2 mins only)
2) add in pandan juice and mix well
3) sieve in flour by 3 times and fold gently till well combined 
4) add in oil and fold gently too
5) scoop the batter into cup cake liners
6) steam at high heat for 10 mins


20/4/2015 Monday blueeeee *.^

Since Friday midnight till Monday midnight,  I am training my 20.5mo lo to stop midnight nursing as I wish her to sleep through the night. Continously these few nights, she is still crying for nen nen in the midnight. .. she was saying loud "nen nen".....and cried...

I try to comfort her by patting her gently on her shoulder and telling her, "you are big girl now, no more nen nen in the midnight, you should sleep.... good gal, sleep ya... later morning only can drink nen nen."

I really do not know how many days more she can adopt herself without nen nen in the midnight. ..sign...

Breakfast : Banana yogurt and steamed edamame
Lunch and dinner : Korean style Tofu Mix grains rice balls and beetroot soup
Teatime : crunchy potato rings and honey drinks



Banana yogurt
Ingredients
2 bananas
2 tbsp plain yogurt
1 tsp honey

Blend till smooth and ready to serve.



Korean style Tofu Mix Grains Rice / Rice Balls
Ingredients
80g cooked rice
1/4 pc Tofu (Beancurd) Tiny cubed 
50ml water
1/4 tsp soy sauce (I replaced by liquid amino)
1/4 tsp sugar
5g carrot (sliced)
5g spinach ( i replaced by broccoli)
1/4 tsp sesame oil
some sesame powder

Steps:
1) add water, sugar and soy sauce into a small pan / pot, cook till boiling then add in the tofu and turn to low heat, cook until dry up. off fire (A)
2) Steam sliced carrot and broccoli for 10mins, chopped finely (B)
3) mix (B), sesame oil, sesame powder, rice into (A), mix well and ready to serve warm or divide into 3 portions and press with a mould or free hand and form rice balls.

P/s: Tofu is full of protein, calcium and iron, cut into small pieces is easier for little one to self feed by spoon; further, tofu is good to substitute meat if your little one dislikes meat.
