Throwback 15/7/2015 Wednesday (23 mo)

Holiday mode was on and didn't post the meals of the day last Wednesday. ;P

Breakfast: Baked Zuchinni & cherry tomatoes, Mini Sandwich and fresh milk

Lunch & Dinner: Radish Zuchinni Porridge

Teatime: Edamame, Banana & Barley Drinks


Mini Sandwich
Ingredients:
1 slice wholemeal bread
some homemade chicken floss
1/3 zucchini
some cheddar cheese


Radish Zucchini Porridge
Ingredients:
60g Minced pork tenderloin
1 black fungus
1/3 Radish
1/3 Zucchini
3 tbsp White Rice
2-3 cups water


Barley Drinks
Ingredients
3 cups chinese barley (生熟薏米)
1 honey date
10 pcs dried fig
3 cups hot water
1 pandan leaf

Cook in slow cooker with auto mode for at least 2 hours. ready to serve warm

20/7/2015 Monday meals (23 mo)

Happy returning to work with smooth traffic this morning~

After 4 days holidays and back to work again... no matter working days or holidays, mummy's cooking days in ON everyday... wake up 4am or 5am with or without alarm setting is daily routine for mummy.... Luckily the happy moments are always be with my family and loved ones.

Breakfast: Mini Burger with cheesy eggplant & fresh milk
Lunch and Dinner: 1 Pot Meat Rice
Teatime: Sweet Potato egg yolk sticks and Pear Barley Drinks



Mini Burger
(Using 5 mins kneadless soft milky bun recipe, for recipe please click)

Cheesy Eggplant
Ingredients:
1 small eggplant
1 egg yolk
some Bega cheddar cheese (cut into 1.5cm X 2cm slices)

Steps:
1) slice the eggplant into 6-7mm thickness
2) put some oil in the frying pan
3) pan fry the eggplant till both sides light golden brown
4) dip the eggplant slices into egg yolk and continue pan fry till both sides are cooked
5) place a slice of cheddar cheese on top of each eggplant 
6) off fire and close lid, remove when cheese is melted
Simple and Easy 1 Pot Meat Rice
Ingredients:
3 tbsp white rice / mix grains rice
65g pork tenderloin / chicken breast
1/3 cup orange juice / grape juice
3 pc dried mushroom (soak in hot water)
some broccoli
1 shallot
1 small pc ginger
1/2 tsp liquid amino / omit / light soy sauce
1 rice size sea salt
dash of pepper powder

Steps:
1) cut the meat into small tiny cubed size, then marinate it with orange juice for at least 30mins
2) chop shallot and ginger into fine pieces
3) cut mushroom and broccoli into small bite size
4) warm some olive oil in a frying pan over low heat. Sauteed shallot and ginger till fragrance, add in meat and stir fry for a while.
5) add in mushroom and broccoli, stir fry a while too.
6) Finally add in the rice (raw) and stir fry for 1 min, Add in salt, liquid amino and pepper powder, mix well and off fire.
7) Pour the rice mixture into mini rice cooker or ELB (electrical lunch box) and add in 3 tbsp water in to the rice, cook rice as usual or steam for 15mins.



Sweet Potato Sticks (flour-less, sugar-less)
Ingredients
1 Japanese sweet potato (cooked and mashed 65g)
35g cooked rice
1.5 egg yolk (25g)
10g unsalted butter
1 tbsp fresh milk

Steps
1) cook whole piece of sweet potato (with skin) till soft
2) remove skin and mash the sweet potato then weight out 65g
3) blend rice, sweet potato, milk and egg yolk till smooth, then add in the butter and mix well
4) put the mixture into a plastic bag
5) cut a hole at the edge and squeeze out desired patterns
6) bake at pre-heated oven of 150'C for 20-25 mins or light golden brown

Golden Pear Barley Drinks
Ingredients
3 cups chinese barley (生熟薏米)
1/2 golden pear (cubed)
1 honey date
8 pcs dried fig
3 cups hot water

Cook in slow cooker with auto mode for at least 2 hours. ready to serve warm

14/7/2015 Tuesday (23 mo)

Today, I don't know what type of breakfast I shall prepare for my lo and ended cook the spaghetti for her and also for the whole family as breakfast.

Breakfast: Spaghetti with mushroom sauce, honey dew, blueberries & fresh milk

Lunch & Dinner: Rice with baby spinach omelette and corn soup

Teatime: Flavoured Yoghurt melts and honey dew yoghurt drinks



Spaghetti with mushrooms cheese sauce

Ingredients: 
Spaghetti or any types of desired pasta, cook as per instructions 

Mushroom cheese sauce (for 4 servings)
Ingredients:
4 cloves garlic
1 onion
8 brown button mushroom (blended)
2 brown button mushroom (diced)
10 asparagus
1/2 red capsicum
30g cheddar cheese
1/2 cup full cream milk
1 cup water
some garlic powder 
some pepper powder, italian herbs
flour mixture (1 tbsp flour+ 3 tbsp water)


Steps:
1) dice the mushrooms, capsicum, onion, garlic and asparagus into small size
2) heat pan, add some olive oil, sauteed the garlic and onion till fragrant
3) add in the mushroom, capsicum and asparagus, stir fry for a while
4) add in water and cheddar cheese. Cook till boiling and cheese melted.
5) add in milk and flour mixture, off fire when boiling. Ready to serve warm.






Apple Corn Soup
Ingredients:
1 pc of organic apple
1 stick of sweet corn
2 pcs of chicken tight
some goji berries
1 potato
1.5 litre water

Cook in low fire for 2 hours.


Baby Spinach Omelette
1 bowl Baby Spinach 
1 egg

Steps:
1) finely diced the baby spinach
2) add in the egg 
3) add in 2 rice size salt n dash of pepper
4) mix well and pan fry till both sides are coooked



Flavoured Yoghurt Melts
Ingredients
100g Yoplait Baby Banana Yoghurt
50g milk powder / baby formula milk powder
50g corn starch

3 egg whites (large size egg)
1/2 tsp lemon juice or vinegar

Steps:
1) sieve milk powder and corn starch into the yoghurt, mix well.

2) add the lemon juice into egg white, beat the egg whites till hard peak form 

3) add 1/3 of the egg white into the yoghurt mixture, mix well (I mix by using mixer)

4) add the yoghurt mixture into the 2/3 of the egg white and fold well gently but quickly.

5) preheat oven at 120'C

6) put the mixture in a piping bag or plastic bag, cut a 0.5cm hole at the edge

7) Squeeze out 1cm ~ 1.2cm round shape onto baking tray laid with non stick parchment paper

8) Bake at 100'C for 50-60mins or till the cookies easily be removed from the parchment paper, let the cookies inside the oven till cool down before taking out
