29/8/2017 (TUE) Apple Raisin Scone

Good day dear all~
During our last visit to the GK Organic farm at Bangi, I bought a pack of Organic Mulukhiya Noodle. I was told by friend that this Mulukhiya vegetable (Molokhia) is very good for health. It helped her daughter in improving her digestion problem. This amazing vegetable is called as King of Vegetable.

Breakfast: Apple scone, multigrain cereal, Japanese cucumber and fresh milk.
Lunch: Organic Mulukhiya Noodle with baby spinach soup, steamed chicken drumstick and stir fry French beans
Teatime: Fig yogurt



Apple Scone
Ingredients
100g Cake flour or all purpose flour
1 1/2 tsp Aluminum free baking powder
1-2 tbsp fresh milk/soymilk
40g apple puree (i shred the apple with a grater)
30g cold unsalted butter (tiny cubed)
10g organic cane sugar

Steps:
1) sift flour and baking powder in a big bowl
2) add in the tiny cubed cold butter and rub by hand till bread crumbs condition
3) add in apple puree and raisin, mix with hand
4) gradually add in fresh milk little by little and gently mix and form a soft dough. Once dough is formed, may stop adding milk. (Remember not to over knead)
5) wrap by cling wrapping and put in the fridge to rest for 30 mins
6) preheat oven at 200'C
7) roll the dough flat about 5 mm thick, and fold into half. using cookie cutter to cut out any shape
8) bake at 200'c for 15 mins or till light golden brown

苹果司康
材料:
100克 蛋糕面粉或普通面粉
1 1/2茶匙无铝泡打粉
1-2汤匙 鲜奶/豆奶
40克 苹果泥(我用刨丝器把苹果刨碎)
30克 冷的无盐奶油(切小颗粒)
10克 有机蔗糖

做法:
1)把面粉和泡打粉过筛在一个大碗里拌匀。
2)加入冷的奶油粒,用手搓揉成类似面包糠的状态。
3)加入苹果泥和蔗糖,用手拌匀。
4)慢慢加入鲜奶,搓成一个软面团。一旦面团形成,可停止加牛奶。 (切记不要过度揉搓)
5)用保鲜膜包着面团,放在冰箱里休面30分钟。
6)用擀面棍按压成5mm的厚度,并折叠成半。用任何形状的饼干模具切割。重复按压,折半和切割至面团用完。排放在铺有不沾布(纸)的烤盘上。
7) 放入已经预热200°度的烤箱,烤大约15分钟或至上色。



 Spinach Soup
Ingredients:
100g lean pork / 1pc chicken tight
some goji berries
1 bowl of baby spinach
3-4 bowls water

Steps:
1) blanch spinach in boiling water for 1 min. put aside.
2) blanch chicken tight in boiling water for 3-5 mins. Put the tight in a small pot, add in water and shimmer for 30mins. If lean pork, can skip the blanching step.
3) add in goji berries and spinach, cook for 1 min.
4) off fire and done.

菠菜湯
材料:
100g瘦肉 / 1塊 雞上腿
枸杞 適量
1碗 菠菜苗
3-4 碗水

做法:
1 )菠菜苗放入滾水,煮1分鐘後撈起備用。
2)雞上腿去水3-5分鐘。(如果是瘦肉则不需要去水)放入小鍋,加入水,小火燜煮30分鐘。
3)加入枸杞和菠菜苗,略煮1分鐘。
4)關火即可。

Steam chicken drumstick
Ingredients:
1 - 2 chicken drumstick (kee song chicken)
some wolf berries / goji berries
some cherry tomatoes
1 small piece of ginger

Steps:
1) slice the ginger 
2) add in goji berries and cherry tomatoes.
3) steam at medium high heat for 15mins

Miso Chicken Chop
Ingredients:
100g boneless chicken tight
1 tsp miso paste
1/2 tsp cane sugar
dash of black pepper
1 tbsp corn flour

Steps:
1) cut the chicken tight into desired size
2) use the back of the knife roughly beat the meat
3) add in all other ingredients and marinate for at least 30mins
4) pan fry till both sides are cooked.

味噌雞扒
材料:
100g 無骨雞腿肉
1茶匙 味噌醬
1/2茶匙 蔗糖
少許 黑胡椒粉
1湯匙 玉米粉

做法:
1)將雞肉切成喜歡的大小
2)使用刀背剁一剁雞肉
3)加入所有其他的調味料,醃製至少30分鐘
4)下熱油鍋煎至兩面熟透即可。

11/8/2017 自制(软)椒盐脆饼 / 蝴蝶圈饼

Easy Homemade Soft Pretzels
yield: 12 PRETZELS 
prep time: 25 MINUTES 
total time: 40 MINUTES
Ingredients:
180ml warm water 
1 1/8 tsp instant dry yeast
1/4 tsp salt (original recipe is 1/2tsp)
1 Tbsp brown sugar (original recipe is 1/2 Tbsp)
10g unsalted butter, melted and slightly cool
230-250g all-purpose flour

Baking Soda Bath
60g baking soda
1100g water

Directions:
1) Mix the yeast into warm water. Allow to sit for 1 minute.
2) Add in salt, brown sugar, and melted butter. Slowly add the flour by 3 additions. If still sticky, add more flour as needed. Poke the dough with your finger - if it bounces back, it is ready to knead.
3) Turn the dough out onto a floured surface. Knead the dough for 3 minutes and shape into a ball. Cover lightly with a towel and allow to rest for 10 minutes. (Meanwhile, I like to get the water + baking soda boiling as instructed in step 6.)
4) Preheat oven to 200°C. Line baking tray with parchment paper or silicone baking mats. Set aside.
5) Divide dough into 12 portions equally. (38-40g per dough) Roll the dough into a 15-16 inch rope. Take the ends and draw them together so the dough forms a circle. Twist the ends, then bring them towards yourself and press them down into a pretzel shape.
6) Bring baking soda and 1100g water to a boil in a large pot. Drop 1-2 pretzels into the boiling water for 20-30 seconds. Any more than that and your pretzels will have a metallic taste. Using a slotted spatula, lift the pretzel out of the water and allow as much of the excess water to drip off. Place pretzel onto prepared baking sheet. Sprinkle each with coarse sea salt. (I omit salt here) Repeat with remaining pretzels.
7) Bake for 12-15 minutes or until golden brown.
8) Remove from the oven and serve warm with cheese sauce or honey or maple syrup. Pretzels may be stored in an airtight container or zipped top bag for up to 3 days (they lose a little softness).

Make ahead tip: Pretzels freeze well, up to 2 months. To reheat, bake frozen pretzels at 175°C for 20 minutes or until warmed through or microwave until warm. The prepared pretzel dough can be refrigerated for up to one day or frozen in an airtight container for 2-3 months. Thaw frozen dough in the refrigerator overnight. Refrigerated dough can be shaped into pretzels while still cold, but allow some extra time for the pretzels to puff up before the baking soda bath and baking.

自制(软)椒盐脆饼 / 蝴蝶圈饼
准备时间:25分钟
总时间:40分钟
材料:
180ml温水

1汤匙 有机黄糖 (原食谱是1/2汤匙)
10克 无盐奶油,融化放凉

苏打水浴
60克 小苏打
1100克 水

做法:
1)将酵母加入温水,搅拌下。放1分钟让酵母发酵一下。
2)加入盐,红糖和融化的奶油。慢慢分3次加入面粉。如果仍然粘手,添加更多的面粉。用手指揉面团 - 如果它反弹,就准备揉捏了。
3)将面团放在桌上,用手开始揉面团,将面团揉到表面光滑有弹性,大概3分钟,揉成球状。用毛巾轻轻盖上,放置10分钟。 (同时,按照步骤6的指示开始煮水+小苏打)
4)预热至200°C。把羊皮纸或矽胶烘烤垫铺在烤盘上,待用。
5)将面团分成12部分。 (每个面团38-40克)放在不沾黏的台面上, 将面团擀成细长的绳子状, 38-40公分。两边尖端搓细一点, 要做成椒盐脆饼的形状. 先将两端扭转两次, 然后将它们反转搭在绳子较粗的中间部分。
6)将小苏打和1100克水放入大锅中煮沸。将1-2片椒盐脆饼放入沸水中20-30秒。不要煮太久,蝴蝶圈饼会有金属味道。沥干水分后将蝴蝶饼放在抹油的烤盘上,撒上粗海盐,(我没有放盐)重复至所有蝴蝶圈饼煮好。
7)送入烤箱,烘烤12-15分钟或直到金棕色。
8)从烤箱中取出,用奶酪浆或蜂蜜或枫糖浆一起享用。蝴蝶饼可以储存在密封的容器或拉链袋中长达3天(它们会失去一点柔软度)。

提前提示:蝴蝶圈饼冻好,最长可达2个月。要再加热,在175°C下烘烤冷冻蝴蝶圈饼约20分钟,或用微波加热至温热。所制备的蝴蝶圈饼面团可以冷藏长达一天或在密闭容器中冷冻2-3个月。将冷冻面团在冰箱中解冻过夜。冷冻的面团可以在冷却时成形为蝴蝶圈饼,但是在小苏打浴和烘烤之前,可以让一些额外的时间让蝴蝶圈饼发酵一下。


**可以不用粗盐, 用芝麻, 葵瓜子或南瓜子代替.
 **若要吃甜的,可以抹上蛋汁,烤好后刷上糖浆,再沾上肉桂糖粉就好了

8/8/2017 (tue) 烤箱版寶寶雞米花


鸡米花的制作视频

Baked Chicken Popcorn 
(Recipe By: 貞穎麻麻的綺幻冒險)
Ingredients
1 tbsp Grape seed Oil
10g Potato starch
30g Low Protein flour / cake flour
1 egg yolk
2 tsp sugar
1/8 tsp salt
Dash of Pepper powder
80-100g Chicken Tenderloin  / chicken breast  

Steps:
1) Heat pan, add in the oil for 10 seconds, pour in the potato starch and stir fry for a while and off fire.
2) add in egg yolk and other seasonings (salt, sugar, pepper), stir well. Finally add the flour and mix well by rubbing it till bread crumbs texture. 

3) throw the cubed chicken tenderloin into the bread crumbs. Let them coated well and press firmly. 

4) bake at preheated oven of 170'C for 15-20mins.

(The outer texture is slightly crispy and inner is soft and tender chicken meat.
If you want to have more crisp taste, can bake longer time about 3 to 5 minutes)

烤箱版寶寶雞米花
材料:
植物油10g / 1湯匙(我用米糠油)
日本太白粉10克
低筋麵粉30克
蛋黃1顆
糖 2茶匙
鹽1g / 1/8 茶匙
胡椒粉少許
雞裡肌/雞胸肉80-100g (切小丁)

做法:
1)將玄米油(或其它炒菜用油可),倒入鍋中加熱約10秒,倒入日本太白粉翻炒後熄火,起鍋。
2)加入蛋黃攪拌均勻,再加入調味料(鹽,糖,胡椒),最後加入麵粉,混合均勻。

3)將粉團(鬆散,碎碎的團狀。)用手指搓開(搓小塊狀)所有粉糰搓成ㄧ粒粒小粉糰時,將里肌塊(里肌肉直接切小丁) 全部丟入粉糰中,每顆雞米花表面沾滿後,可放在手掌中捏緊。

4)烤箱160度烤10分鐘(我的烤箱170度,一共烤了15分鐘)。

(外皮是微酥的奶酥餅乾口感,而雞肉還很軟嫩,
如果想追求更酥脆口感,再多烤3〜5分鐘!)

3/8/2017 Deco steamed Cupcakes

Deco Steamed Cupcake
Servings: 4 steamed cakes
Ingredients:
½ cup cake flour (½ cup = 60 g)
1 tsp baking powder
1 large egg
2 Tbsp milk
1.5 ~ 2 Tbsp granulated sugar
1 Tbsp neutral flavor oil (vegetable, canola, etc)


(B) For the details and designs
Black batter: 0.5 tsp black or dark cocoa powder + 2 tsp basic batter
White batter: 0.5 tsp corn flour + 2 tsp basic batter
Brown batter: 0.5 tsp cocoa powder + 2 tsp batter

(C) For the BEAR (brown batter)
Brown: 1 tsp cocoa powder + 1/2 of the remaining basic batter

Steps:
1. Cover the lid with kitchen towel to prevent condensation from the lid from falling on to the steamed cakes (please don’t skip!). 
2. In a medium bowl, sieve in cake flour and baking powder.
3. In a small bowl, whisk the egg, milk, sugar, and vegetable oil together until combined.
4. Pour the egg mixture into the flour mixture and mix until smooth.
5. Put a cupcake liner in cupcake mould and divide the basic batter into the 2 cupcake liners and the brown batter into another 2 cupcake liners. (about 80% full)

6. Making the color batter for piping drawing:
~Black batter – Scoop out 2 tsp of basic batter and add in 0.5 tsp dark/black cocoa powder. Mix well and transfer into a small hand rolled piping bag made from parchment paper.
~Brown batter – Scoop out 2 tsp of basic batter and add in 0.5 tsp cocoa powder.  Mix well and transfer into a small hand rolled piping bag made from parchment paper.

7. Pipe the details using the various colours. Try to keep the drawing in smaller size and lines fine.

Tip: If you really make a mistake, you can use toothpick to help adjust or even scoop out the batter a little.

8. Place the steam cakes on a steamer rack and steam at medium low heat for 10 mins.

Point:
** It is good to place each of them in a holder/container. This prevents the cup from expanding too much, keeping your design intact. 

** Please ensure that the pot is high enough as the cakes will rise when steamed.

** In addition, highly recommend to cover the pot lid with a steamer cloth to prevent water from dripping onto the cakes. It will spoil the design and may cause sinking, or the cake to split apart. 

9. Make the ears of the characters. Pipe the coloured batter from step 6 on good quality parchment paper. I usually like to pipe extra so that I can pick and choose the ears that look good and with the right size.

10. Steam each for about 2-3 mins. I place the parchment paper on a small flat plate or tray to steam on the steaming rack.
11. Using a small sharp scissors, cut a shallow slit where the ears are to be and slot them in to complete the characters




How to draw on cupcakes
如何制作在造型杯子蛋糕

蛋糕的弹度 spongy of the cupcake

蒸造型杯子蛋糕
材料:低筋粉 60g
无铝泡打粉 1茶匙
牛奶 2 汤匙
糖 1.5 ~ 2 汤匙
蛋1隻 (約60g)
植物油 1汤匙

做法:
1)蛋加糖拌勻加入牛奶攪勻後,篩入粉類拌至沒有粉粒,最後加入油拌勻。
2)倒入模中,以中小火蒸10分鐘即成。

寶寶海南雞飯
材料:
1/3杯 壽司米/白米
3只小雞腿/1只雞腿
4個新鮮/乾的香菇
5克無鹽奶油
1粒小蔥頭
2片姜
1/2茶匙 少鹽醬油/液體氨基或少許鹽
胡椒粉少許
一些蔥花/蔬菜
1/3杯 雞湯/清水
2片班蘭葉/香蘭葉(沒有的話,可以不放)

步驟:
1 )浸泡白米約30分鐘。
2 )把蔥頭剁細。
3 )把生薑切成片,把鮮菇切成顆粒。
4 )把鍋加熱,倒入少許橄欖油,爆香蔥頭和姜。
5 )加入雞肉和香菇翻炒至淺金黃色。
6 )倒掉浸泡米的水,把白米放入油鍋裡然後加入鹽或少鹽醬油和胡椒粉。
7 )加入奶油翻炒幾分鐘,熄火。
8 )舀出米飯和雞肉,放入電飯鍋,倒入1/3杯的雞湯/清水蓋過白米。把班蘭葉紮好,放在米飯上面。
9 )像往常一樣在電飯煲煮飯或放進蒸籠,大火蒸15-20分鐘即可。

BABY Hainanese Chicken Rice 
Ingredients:
1/3 cup sushi rice / white rice
3 pcs chicken drummets / 1pc chicken drumstick
4 pcs fresh shitake mushroom/ dried mushroom
5g unsalted butter
1pc shallot
2 slices ginger
1/2 tsp liquid amino or pinch of salt
dash of pepper powder
some green onion / vegetables
2 pcs pandan leaves
1/3 cup chicken broth / water

Steps:
1) soak white rice for 30mins - 1 hour
2) chop shallots finely
3) cut ginger into slices, dice the mushroom
4) heat pan with low fire, add in a little olive oil, sauteed shallot and ginger till fragrance
5) add in chicken and mushroom, stir fry till light golden brown
6) throw away the soaked water, pour the rice into the pan, follow by salt/liquid amino and pepper
7) add in butter and stir fry for few mins, off fire
8) transfer the rice and chicken into rice cooker, pour adequate water to cover rice, tie the pandan leaves and put on top of the rice
9) cook rice as usual in rice cooker or steam for 15-20mins.

Breakfast: Cheese egg sandwich

2/8/2017 pumpkin pancake 南瓜煎饼

Pumpkin Pancake
Ingredients:
50g Cake flour
50g shredded pumpkin
1/2 tsp aluminum free baking powder
1 pc Egg
1 tbsp organic cane sugar
1/2 tbsp vegetable oil
1 tbsp fresh milk

Steps:
1) beat egg and sugar with electric mixer till fluffy
2) add in milk, oil and pumpkin, stir well.
2) sieve in flour and baking powder, stir well.
3) heat pan with little olive oil and wipe off with kitchen towel
4) Use 1 tablespoon measuring spoon to scoop a spoonful of batter into the pan , cover with the lid. About 20 to 30 seconds, a number of holes on the surface of the pancake shall form, open the lid and it is ready to overturn the pancake
5 ) cook for another 30 seconds and done
6) cold down pan before repeating steps 4-5 until all batter is finished

P/S:
1) The above recipe yield 10-12 small pancakes, using same volume of batter each time, pancake size will be more evenly ~
2 ) Do not put too much oil , you can drop a few drops of oil on the pan then wipe evenly by a kitchen towel paper.
3 ) Always use the smallest fire to avoid burnt.
4 ) To make nice dorayaki, the cool down process must not skip!!

材料:低筋麵粉50g,南瓜刨成丝50g,無鋁泡打粉1/2茶匙,蛋1個,植物油1/2 湯匙,鮮奶1湯匙,蔗糖1湯匙

做法:
1) 用攪拌器把雞蛋和蔗糖打發(大約1 分鐘)
2)加入鮮奶,油和南瓜丝,拌勻。
3) 篩入麵粉和泡打粉,攪拌均勻。
3) 加少許油在熱的平底鍋裡(全程用小火),再用廚房紙巾擦勻。
4) 用1湯匙的量匙,分別挖一勺麵糊放入鍋中,蓋上蓋子。約20~30秒鐘左右可見到蛋餅表面出現若干小洞、打開蓋子並可以翻面了。
6) 翻面之後也同樣煎半分鐘左右即可出鍋。
7) 將平底鍋放在濕布上降溫,再放回爐上。重複步驟4-5,直到麵糊全部用完。

~**本人的小貼士**~

1)以上食譜大約可以做10-12個小的煎餅,每次勺同樣的分量,煎餅的大小就會比較均勻啦~
2)油不要放多,可以滴幾滴油在鍋內之後,用紙巾擦勻。
3)一定要用最小火。火一大就容易煎焦。

My Princess - 4th Birthday PICNIC PARTY小公主的生日野餐派对

After having great suggestion from my friend and Hubby to have PICNIC PARTY, we finally decided to celebrate our girl's birthday at the Pullman Putrajaya Lakeside.
I have invited a few good friends with their little ones and we are total 7 adults and 5 little ones in this Picnic Party.
I have planned the food a week ago and started making the fondant figurines of PAW PATROL few days ago. Everything was planned nicely and the only bad thing was my hand wounded by knife during cutting out the seed of the avocado.
Overall we all had fun especially the kids. Little Princess was super excited that day and had her dry swimming on the sand too.

We arrived at the lakeside around 9.30am and went home at 2pm. It was quite hot weather compared to our first picnic here one month ago. 

My home cooked FOOD for the Picnic Party:
1) Old School Buttercream Cake with PAW PATROL figurines made by myself  using fondant (Marshall, Rubble, Chase and Skye)
2) Bacon Spaghetti
3) corn salad
4) Young coconut fruit salad
5) cream cheese ham sandwich
6) fruits in skewer sticks
7) apple potato salad
8) baked honey chicken wings
9) red eggs
10) Jelly in cups
11) mini egg frittata
12) pop corn
13) cheese cookies and oat cookies (in goodie bag)
14) died fruit tea (for mommies)
15) banana, small oranges
16) hot coffee and hot rose tea


Old School Buttercream Cakes
Sponge cake
Ingredients:
(A) 4 egg yolks
75ml corn oil
130ml milk / water
150g self raising flour

(B) 4 egg whites
80gm sugar

Steps:
1) Mix ingredients (A) till smooth. Add in enough water to form a smooth batter.
Not too thick or too runny.
2) Whisk ingredients (B) till stiff. Mix (A) to (B) and mix lightly. Pour into a 11×14 inch lined tray and dropped the tray on the table a few times. Bake at 180° for 20-25 mins. Let it cool.

Buttercream
(Can be stored in room temperature for a week)
Ingredients:
200g Marjerin
80g Unsalted butter (room temp)
180g golden Syrup (originally was 350g)




















布城(布特拉再也城 Putrajaya)有个人造沙滩,位于铂尔曼布城湖畔大酒店(Pullman Putrajaya Lakeside Hotel)旁。铂尔曼布城湖畔大酒店很靠近PICC (Putrajaya International Convention Centre)之前有带小公主去PICC看班尼表演(Barney show)。

       在PICC附近便可看到一座很漂亮的酒店~ 铂尔曼布城湖畔大酒店(Pullman Putrajaya Lakeside Hotel)。可以把车子停放在酒店内的停车场,但需要步行好一段路程才可抵达人造沙滩。我们把车子再行驶前一点走到Kompleks Sukan Air转进右边(如照片显示)就可以把车子停放在人造沙滩旁。这地方就很方便,尤其是需要提拿蛮多的东西。停车的附近就有梯阶可以直达人造沙滩。

        人造沙滩旁有间蛮干净的厕所,小孩玩沙或玩水后,可以在这里清洗干净。这里的风景很优美,远处可以看到属于酒店建造的瞭望台和布城水上运动场的场馆(Kompleks Sukan Air Putrjaya)。

第一次来野餐时是朋友提议的,非常谢谢Vanessa介绍我们来这个那么好的野餐地点,让孩子们和大人都可以在椰子树下阴凉地享受优美的风景,明媚的阳光,快乐的玩沙(可惜不能玩水,因为水池的水质关系而关闭)。

所以当我们正烦恼着在哪里替小公主庆祝4岁生日,老公就想到野餐了。这是我和老公人生的第一次生日野餐派对曳!!!

在我的朋友和老公建议之后,我们终于决定在 Pullman putrajaya lakesaid 为我家4岁的小公主庆祝生日。我邀请了几位好朋友,我们共有7名大人和5名小朋友参加了这个野餐派对。
我一周前已经计划好了食物的餐单,并在几天之前制作了PAW PATROL的翻糖小公仔。
我家的野餐派对食物:
1)用自己制作的PAW PATROL翻糖小公仔(Marshall,Rubble,Chase和Skye)的老式奶油蛋糕
2)培根意大利面
3)玉米沙拉
4)嫩椰子水果沙拉
5)奶油起司火腿三明治
6)水果串串
7)苹果马铃薯沙拉
8)烤蜂蜜鸡翅
9)红鸡蛋

11)迷你烤意式蛋

13)奶酪饼干和燕麦饼干(in goodie bag)
